Rainy Day Cinnamon Rolls

We all have an undeniable sweet tooth! Who can resist the lure of a freshly baked and iced cinnamon roll! I bet we all can agree that the best part of a cinnamon roll is the center. Hands-down!

These rolls are the perfect rainy-day recipe. The recipe is easy to follow, but very time consuming. However, the end result will have you drooling. Snuggle up to a movie or a drama binge with these rolls. Grab a cup of coffee (or tea) and start your morning off with one. You and your family will instantly fall in love with these.

Ingredients:

  • FOR THE ROLLS:
  • 8 Cups of All-Purpose Flour
  • 2 Packages of Yeast
  • 1/2 Cup of Warm Water
  • 2 Cups of Milk
  • 1 Package of Instant Vanilla Pudding
  • 2 Tablespoons of Sugar
  • 1/2 Cup (1 stick) of Unsalted Butter
  • 2 Large Eggs
  • 1 Teaspoon of Salt
  • FOR THE CINNAMON SPREAD:
  • 1 Cup (2 sticks) of Unsalted Butter
  • 2 Cups of Brown Sugar
  • 2 Tablespoons of Cinnamon
  • FOR THE FROSTING:
  • 1 Package (8oz) of Cream Cheese
  • 1/2 Cup (1 stick) of Unsalted Butter
  • 3 Cups of Powdered/Confectioners Sugar
  • 2 Tablespoons of Milk
  • 1 Teaspoon of Vanilla Extract

Instructions:

  • First we are going to prepare the dough! Start off by dissolving the sugar and yeast in the warm water. Mix well and set aside while you prep the rest of the ingredients. (Fun fact, my grocery store did not have the regular dry yeast that I usually buy, so I opted for “pizza crust yeast”. She worked just fine!)
  • In a bowl, prepare the instant pudding according to the package instructions using the milk.
  • Now add the butter (pre-melted), eggs (pre-beaten), and salt. Mix well then add the yeast mixture. Combine all of the ingredients well.
  • Add the flour gradually and knead this mixture until it is smooth.
  • Prepare a large, greased bowl and put the dough in it. Cover the bowl and let it rise in a warm place until it doubles in size. When the dough gets THICKK and rises, punch it down, re-cover it, and let it rise again.
  • Prepare a large floured surface, and a rolling pin, and roll up your sleeves because it’s about to get messy!
  • Roll out the dough into a huge, long rectangle. Don’t roll the dough out too thinly, it should bet least 1/2 an inch thick.
  • Now let’s make the cinnamon spread! In a bowl mix together the cinnamon and the brown sugar. If you don’t think there’s enough spread, add an additional 1/2 cup of brown sugar 🙂
  • Take the melted butter and use a brush (or if you don’t have a brush like me, I used the back of a spoon) to spread it over the entire surface of the dough.
  • Sprinkle your cinnamon-sugar mixture on top of the buttered dough. Then roll the dough up! After your roll is completed take a knife and begin slicing the roll into 2 inch thick pieces. You should squeeze/pack down every roll to make sure they hold together when you transfer them to the baking sheet.
  • Preheat your oven to 350 degrees.
  • Place the rolls on a buttered baking pan or on a parchment lined baking sheet, cover them, and allow them to rise in a warm place for 30 minutes. Uncover and bake the rolls for 20 minutes or until they are golden brown.
  • While the rolls are baking, let’s prepare the frosting which you’ll sprinkle on the rolls when they’re still fresh out of the oven and warm!
  • In a bowl, combine the softened cream cheese, softened unsalted butter, powdered sugar, milk and vanilla extract. Mix together until it’s nice and smooth and creamy.
  • When you take the rolls out of the oven, pour/spread the frosting on them and……BOOM you’re finished!
